Molasses flavor and a subtle carrot hint with a gentle sweetness. Washed process. Castillo variety, developed in Colombia. The Cauca region is located in central-western Colombia. The coffee is grown and processed at La Palestina farm, owned by the family of Joaquin Alvaro Tunubala, who has dedicated his life to coffee cultivation. The farm covers an area of 13 hectares, making their coffee a microlot. I roast the coffee light to preserve as much as possible of its varietal characteristics, origin, cultivation method, and overall care. Therefore, it's excellent for filter brewing. I adore the Hario V60, and you can find my recipe on the label.
